Cheese Designations
This List of PDO Italian cheeses includes all the Italian cheeses which have Protected Designation of Origin (PDO) status under European Union regulations.
Prior to 1996 when the PDO system came into operation, many Italian cheeses were regulated under a Denominazione di Origine (DO) system, which arose out of the 1951 Stresa Conference and was established under the Italian law 125/54.
These appellations of origin were recognized in a number of European countries with which Italy had bilateral agreements. (The international framework of recognition was further developed—and extended from cheese to include other agricultural products—by the Lisbon Convention of 1958, and the modifications made to it at Stockholm in 1967, and by the TRIPS accord of 1994.)
All of the existing “DO” cheeses were registered by the EU as “PDO” cheeses during the course of 1996.

The "Canestrato of Moliterno," one of the most cheeses Lucan 'characteristic, won by Italy a new protected geographical indication (PGI) against imitations and fakes in Europe. Brussels fact, today gave the final go-ahead in the European register of name recognition and protected geographical indication (PDO and PGI) the peculiarity of a cheese 'lies in the maturation phase, the characteristics cellars, warehouses which are located in Moliterno . The cheese is made from milk of sheep and goats bred mainly to grazing: the wide area of production of milk in fact, follows the ancient paths of transhumance of the herds. For its production, the curds are pressed into molds (named Canestrato) of which is the sign on once the crust and cheese 'was seasoned. Slightly sweet and delicate in the early seasoning, then evolves towards organoleptic more 'pronounced and spicy, tangy and aromatic. The area of production and 'consists of about sixty municipalities located in the province of Potenza and Matera (Basilicata).

Pecorino di Picinisco, a sheep’s milk cheese (with the optional inclusion of up to 25% goats’ milk), produced in the Valle di Comino region of the Province of Frosinone (Lazio).[22] The application was submitted on 28 February 2011.[23]

Most Parmigiano Reggiano wheels cracked simultaneously: Whole Foods Market breaks Guinness world record
AUSTIN, TX, USA -- Whole Foods Market stores across the U.S., U.K. and Canada cracked 426 wheels of Parmigiano Reggiano before cheering fans on March 9 at 3 p.m. EST, setting the new world record for the Most Parmigiano Reggiano wheels cracked simultaneously at multiple venues, according to the World Record Academy: www.worldrecordacademy.com/.

The Guinness world record for the most parmesan wheels cracked simultaneously was 378 and was achieved by Loblaw Companies Limited (Canada) at more than 200 distinct Loblaw stores throughout Canada on 24 March 2012.
Guinness World Records also recognized the world record for the largest soft cheese, which was made by Edelweiss Kaesewerk, Kempten, Germany weighing 180 kg (396.8 lb) and was displayed at a public opening of their factory on 26 October 2002.
"The excitement around Parmigiano Reggiano is palpable in our stores and goes well beyond our cheesemongers and Certified Cheese Professionals™," said Cathy Strange, global cheese buyer for Whole Foods Market.
"Each year, our shoppers look to Whole Foods Market not only for the highest quality Parmigiano Reggiano, but also for an exciting event where they can witness the talent of our cheesemongers and taste the difference of a freshly cracked wheel of cheese hand-sourced from Parma."
The events at each store ranged from face-offs between cheesemongers and tasting events highlighting the flavors of Italy, to plays on this year's theme, "Parmageddon," featuring zombies and astronauts.
Some cheesemongers cracked their 85-pound wheels in under a minute.

It was an overwhelming experience to celebrate this achievement with our customers and colleagues at more than 250 stores; we couldn't have done it without them," said Metzi Liau, Senior Deli Category Director, Loblaw Companies. "Our colleagues were specially trained to crack the wheels in the traditional style upheld by Italy's Parmigiano Reggiano Cheese Consortium, and we are thrilled to have achieved this world record."

Largest goat cheese - world record set by Castel di Lama
CASTEL DI LAMA, Ascoli Piceno, Italy -- An Italian goat cheese made last year by 25 volunteers who worked for eight hours a year ago to put together 850 kg of curd from 3,500 litres of milk and 3,000 goats measures 158 cm in diameter and 29 cm high and weighed in at 1,178-pound (534.7 kg) , setting the world record for the Largest goat cheese.

The 25 Castel di Lama volunteers who created the World's Largest goat cheese, which measures 62 inches in diameter and 11 inches tall, said they used 924 gallons of milk from 3,000 goats to create the pecorino cheese.
The Largest Goat Cheese in The World was seasoned for nine months and, after shrinkage, weighed in at 534.7 kg.
The Guinness World Records office in London told the cheese's makers in the town of Castel di Lama that the almost 535 kg whopper had beaten all comers.
The World's Largest goat cheese will go on display Sept. 2-5 at Castel di Lama's Farm Fair, the creators said.
